White Truffle Eggs en cocotte, a good traditional recipe of Alba

Alba white truffle, a precious ingredient, gives a very special and unique flavor to a dish. Have you ever tasted it?

Ingredients for 4 people:

  • 4 eggs
  • Porcini mushrooms Cream 
  • Alba white truffle
  • 90g cream
  • butter

 
Directions:

For this recipe, you will need 4 ceramic cocotte with a diameter of about 7 cm and height about 4 cm.
Grease the inside walls; for each serving, place half teaspoon of Porcini mushrooms cream and 1 tablespoon of cream directly into each cocotte. Mix the ingredients, add a pinch of salt and pepper and then add one egg in each cocotte, above the cream. Bake at 160 °C for about two minutes, the just enough to heat the cream. Remove from the oven and let cool for about two minutes. Grate some Alba white truffle on top and serve directly in the cocotte.
