Spaghetti with fava beans, cacio (pecorino) cheese, and mint are a recipe filled with Spring flavors - very appetizing thanks to the peculiar taste of fresh fava beans!
Ingredients
• 350 gr of spaghetti
• 200 g of fresh fava beans
• 4 spoons of pecorino cheese
• 3 tablespoons of extra-virgin olive oil
• 2 cloves of garlic
• fresh mint
• salt
• pepper
Directions:
Put the beans in boiling water for just 1 minute, drain them and remove their peel.
Keep the boiling water to cook the spaghetti.
In the meantime, heat the extra-virgin olive oil in a large frying pan with crushed garlic cloves, fava beans and sautee for a few minutes.
Once the spaghetti are ready, drain and add pepper, grated pecorino cheese, and mint - you may also add some boiling water kept from the pasta to mix better and get a smoother sauce
