Gobeletti or Cobeletti - Gubelettu in Ligurian dialect - are a peculiar small-panettone-shaped sweet, made of pastry dough filled with jam.

Gobeletti or Cobeletti - Gubelettu in Ligurian dialect - are a peculiar small-panettone-shaped sweet, made of pastry dough filled with jam. Original of the Genoa and Savona coastal and inland areas, it is now baked in all Liguria.

In fact, Gobeletti were once literally mini panettone, a bit different from their shape today.

Their original shape was obtained using two metal molds: a reversed truncated cone, and a small hat (cobeletto) with scalloped edge.

Ingredients:

  • 400 g of flour,
  • 250 g sugar,
  • 1 egg,
  • 150 g of butter,
  • 1 tablespoon Marsala wine,
  • apricot or peach jam,
  • milk

Directions:

Pour the flour on a pastry board, add sugar, the egg, butter, a little milk, marsala. Knead quickly and let the pastry rest for one hour.

Roll out the dough, make it round shapes to put into molds, (more than 50 years ago, metal molds were handmade).

Add the jam (one teaspoon for each gobeletto), cover with another layer of dough.

Arrange them in the oven at 180 ° C for 15 minutes.
