Recipe of the Week: Montalto's Frandura

A typical recipe from Montalto - in beautiful Argentina Valley in Taggia's inland - Frandura is a potato cake, a simple dish from 18th century when potatoes were first introduced to Liguria; it used to be farmers' meal during their work in the fields.

A fair dedicated to this dish takes place every year in August in Montalto.

Here is the recipe:

Ingredients:

600 g potatoes

200 g flour

2 eggs

40 g grated Parmesan cheese

a glass of milk

extra virgin olive oil, salt and pepper

Directions:

Mix the eggs with the flour and milk to get a creamy and liquid mixture

Cut the potatoes into thin slices and incorporate them into the batter

Grease the pan and pour the mix evenly distributing it

Grate some Parmesan cheese on it

Bake for about 20 minutes in the oven at 250° C 

Serve Frandura hot
