Recipe of the week: Stuffed artichokes

Inspired by Artichoke Time in Ospedaletti, here is a delicious way to make a great use of artichokes!

Inspired by Artichoke Time in Ospedaletti, here is a delicious way to make a great use of artichokes!

Ingredients:

  • 8 artichokes
  • grated bread
  • extra-virgin olive oil
  • 2 tbspoon chopped parsley
  • 1 garlic clove
  • about 10 capers

Directions:

Clean the artichokes, getting rid of the harder outer leaves and cutting the tips. Clean the stems and finely chop them, sautée with olive oil, grated bread, capers, chopped parsley with garlic. Add salt and pepper.

Stuff each artichoke with this mix then lay all the artichokes standing up in a high pan with little water. Add salt and pepper and cover with extra-virgin olive oil. Cover with a lid and let it simmer for about half an hour.

Serve as a starter, a main or side dish.
