Recipe of the week: #Insalata Primavera

Insalata Primavera, or Spring Salad, is a refreshing and tasty Italian recipe perfect for the spring and the warm season.

This salad can be enjoyed as a fresh side or even as a main dish.

Insalata Primavera is composed by mixed vegetables and cheese. However, this recipe is not fixed, and its ingredients vary according to the areas and to personal taste.

This week, we suggest two versions of Insalata Primavera. Try both, and then, if you want, compose your own with your favourite ingredients.

Version 1: Insalata Primavera with primosale cheese and yogurt (vegetarian)

Ingredients

2 cucumbers

a bunch of radish

4 large lettuce leaves

2 tomatoes

chives

100 g primosale cheese 

100 g mayonnaise

125 g whole yogurt

juice of one half of a lemon

salt and black pepper

Method

Wash the vegetable and peel the cucumber. Chop the vegetables and dispose in a salad bowl.

Add the primosale cheese to the fresh vegetables.

In another bowl, prepare the sauce: mix the yogurt, mayonnaise, lemon juice, salt and pepper, until you obtain a creamy sauce. 

Pour the sauce over the salad and mix. Sprinkle with chive and leave the salad in the fridge before serving. 

Version 2: Insalata Primavera with chicken, fontina and raisins

Ingredients

4 large lettuce leaves

1 carrot

1 Tropea onion

1 apple

100 g fontina cheese

200 g grilled chicken breast

raisins to taste

extra-virgin olive oil

salt

Method

Wash and chop the lettuce, the apple and the onion. Peel the carrot and cut it in julienne strips. 

Cut the fontina cheese and the chicken breast into little cubes.

Combine all ingredients together in a salad bowl and season with extra-virgin olive oil and salt.
