Recipe of the week: Biscouteli from Bordighera

Typical sweets, they have a double cooking and an unmistakable shape!

Ingredients:

  • 400 gr of flour, 
  • 20 gr. of brewer's yeast, 
  • 25 gr. of butter, 
  • 150 gr of sugar, 
  • 2 eggs, 
  • 30 gr. of pine nuts, 
  • 30 gr. of sultanas, 
  • 10 gr. of fennel seeds, 
  • 2 teaspoons of anise, 
  • 3 teaspoons of honey, 
  • 2 tablespoons of extra virgin olive oil 
  • salt. 

Preparation:

  1. Mix the flour with brewer's yeast, butter, sugar, pine nuts, sultanas, fennel seeds, honey, aniseed, extra virgin olive oil and a pinch of salt. 
  2. Leave to rise for about an hour. 
  3. Then form round and long breads, 7/8 cm wide. 
  4. Bake at 170 degrees for about thirty minutes. 
  5. Then take out of the oven and cut into large pieces like cookies. 
  6. Place them on the baking tin and put again in the oven for about 10 minutes.
  7. Serve cold.
