A traditional Ligurian dish, the vegetable mishmash is simple to prepare, with very balanced flavors and ingredients. Definitely a recipe to try, especially using vegetables in season.
In fact, this recipe uses Summer vegetables such as zucchini and green beans; one can modify according to the time of year and what is available – that is the beauty of traditional Ligurian cuisine, always based on fresh seasonal ingredients, hence very delicate and light.
Ingredients:
- Vegetables: Green beans, Potatoes, Onions, Zucchini – for quantity one can choose according to personal tastes and availability
- 2 eggs
- Marjoram
- Grated parmesan
- Bread crumbs
- Extra-virgin olive oil
Directions:
Boil the potatoes, zucchini, green beans, and onions.
Chop all vegetables but the potatoes which need to be mashed.
Mix well and add 2 eggs, extra-virgin olive oil, marjoram, salt and pepper to taste; if the mixture is too liquid, then add a bit of bread crumbs for consistency.
Spread the mixture with a fork on a oiled pan and sprinkle the top with bread crumbs and grated parmesan.
Bake in the oven at 200°C for about 30 minutes.
