April 25th is Italy’s Liberation Day and a National holiday. It celebrates the end of the Italian Civil War and the end of the Nazi Occupation of Italy during World War II.
It’s a great day to celebrate and remember.
We chose a symbolic recipe for this day, a delicious salad with the colors of the Italian flag: green, white and red.
An old favorite, the fresh tomatoes basil mozzarella salad: a fresh dish perfect as an appetizer or a light second course. All you need is four ingredients:
- Ripe Tomatoes
- Fresh Mozzarella
- Fresh basil just picked from the plant
- Extra-virgin olive oil
- Salt to taste
Directions:
Cut the tomatoes and the sliced mozzarella with the same thickness. Alternate a slice of tomato and one of mozzarella. Add fresh basil and pour extra-virgin olive oil, add salt.
Some recipes use oregano in place of basil or both.
