Recipe of the Week: Piedmontese Carnival Tortelli with Grappa

These special tortelli are a traditional Piedmontese recipe. They are strips of fried dough usually made during Carnival. Flavored with grappa, they are unfortunately prepared only a few days of the year!

Ingredients for 6 people

  • 240ml milk
  • 1 pinch of salt
  • 110g butter, melted
  • 2 eggs
  • juice of 1 lemon
  • baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons grappa
  • flour as needed
  • olive oil for frying
  • sugar to sprinkle on top

Directions:

  1. Warm the milk and when it gets to boiling temperature move away from heat and add salt, butter, eggs, lemon juice, baking powder, vanilla and grappa, stirring constantly.
  2. Add also the flour, as needed, to form a soft dough. Transfer the dough on a work surface and knead with your hands for at least 10 minutes.
    Then roll out the dough into a thin sheet and cut strips of desired length.
  3. Heat the oil and fry the tortelli on both sides. Remove with a slotted spoon, drain the oil, then sprinkle with sugar. Serve warm.
