These special tortelli are a traditional Piedmontese recipe. They are strips of fried dough usually made during Carnival. Flavored with grappa, they are unfortunately prepared only a few days of the year!
Ingredients for 6 people
- 240ml milk
- 1 pinch of salt
- 110g butter, melted
- 2 eggs
- juice of 1 lemon
- baking powder
- 1 teaspoon vanilla extract
- 2 tablespoons grappa
- flour as needed
- olive oil for frying
- sugar to sprinkle on top
Directions:
- Warm the milk and when it gets to boiling temperature move away from heat and add salt, butter, eggs, lemon juice, baking powder, vanilla and grappa, stirring constantly.
- Add also the flour, as needed, to form a soft dough. Transfer the dough on a work surface and knead with your hands for at least 10 minutes.
Then roll out the dough into a thin sheet and cut strips of desired length. - Heat the oil and fry the tortelli on both sides. Remove with a slotted spoon, drain the oil, then sprinkle with sugar. Serve warm.
