New Year's Eve Cake

To end the year with sweetness, here is an orginal alternative to panettone, a simple recipe by renowned gardener and creative vegetarian cook Libereso Guglielmi.

New Year’s Eve cake

 

Ingredients:

  • gr. 80 raisins
  • 60 shelled walnuts,
  • gr. 70 sugar
  • gr. 60 breadcrumbs,
  • gr. 35 shelled almonds,
  • gr. 30 pine nuts,
  • gr. 40 candied citrus,
  • Half a glass of Marsala wine
  • Pastry dough (bought or previously prepared)

Directions:

Finely grind the pine nuts, walnuts, almonds and candied fruit. Add the breadcrumbs soaked in Marsala and raisins previously soaked in hot water. Roll the pastry dough into a think layer and fill it with this mixture, then shape into a large tarallo. Brush with egg yolk and bake. When cool, sprinkle with icing sugar and cinnamon.
