A traditional Ligurian simple recipe, the fried sweet milk is a delicious dessert or a perfect snack during cold winter afternoons.

A traditional Ligurian simple recipe, the fried sweet milk is a delicious dessert or a perfect snack during cold winter afternoons.

Ingredients:

  • 1 liter Milk
  • 4 Eggs
  • 150g sugar
  • 100g flour
  • Nutmeg
  • 2 grated lemon peels
  • Bread crumbs
  • Olive oil
  • Icing sugar

Directions:

Mix flour, the yolks (set aside the egg whites) and sugar. Then, while still mixing, start adding milk and let rest for one hour.

Add the grated lemon peels and nutmeg.

Cook in a pan for one hour, moderate heat, stirring always in the same direction.

Lay the custard 2cm high in a large tray previously oiled and let cool and harden.

Cut this custard into diamond shapes and pass them into the mounted egg whites and into bread crumbs afterward.

Fry them in boiling olive oil and once golden lay in a tray covered with paper towels. Sprinkle with icing sugar and serve hot.

Perfect as a dessert or a snack during cold winter afternoons. Enjoy!
