Recipe of the Week: Friscioi de çevulette

Friscioi de çevulette (local dialect for spring onion fritters) are a finger food, like other frisceui, they are very quick to prepare as well and very cheap.

Friscioi are a finger food, traditional, delicious Ligurian fritters. Like other friscioi, these are very quick to prepare as well and very cheap: with just two simple ingredients (flour and green onions), you can get something very appetizing. In Liguria, friscioi are often found on bar counters during evening cocktail hour and restaurants serve them as appetizers.

Ingredients:

  • 250 gr. flour;
  • cold sparkling water or 1 glass of beer;
  • 4 spring onions
  • olive oil

Directions:

Clean the onions and slice them thin.

Prepare the batter with flour, a pinch of salt and the cold sparkling water or beer.

Let it rest for at least an hour.

Mix the onions with the batter and fry in oil in a deep pan: drop a spoonful of batter at a time into the hot oil.

Let them brown a bit and turn with a fork, drain them on kitchen paper to remove excess oil and sprinkle again with a pinch of salt.
